We often think of winter as a dormant season in these parts, yet as Farmer Lee says, some of our very best products are harvested in the winter months. Freezing temperatures can actually offer plants a remarkable opportunity to develop concentrated natural sugars, yielding some of the most surprisingly tasty treasures of the earth. It is the same concept as making the liquid gold we know as Ice Wine.   The Chef’s Garden discovered amazing riches in the snow-covered field, and is the sole proprietor of Ice Spinach, with a leaf so intensely green and so richly flavorful it redefines spinach as you know it.  Beets, nature’s candy, will share the spotlight this evening as a member of this family;  Striped, Golden and Red Beets bring an earthy and satisfying depth to the plate while Beet Blush leaves bring it to life with a vibrant touch.  Winter has its own specialties of the season if you know where to find them.
